Cheesy Pumpkin and Chicken Risotto



Another fabulous recipe from the Cheese Matters cookbook!

You will need:

2 cups of diced butternut pumpkin
1 diced onion
1 diced zucchini
2 diced chicken breast
1.5 cups of arborio rice
1.5 litres of boiling chicken stock
1 cup of grated pizza cheese
1 tspn wet crushed basil

Brown the chicken in a pan until golden. Remove.
Add onion and zucchini and saute for 5 mins.
Add rice and one cup of stock. Simmer for 5-7 mins.
Once stock has been absorbed, add remaining stock, pumpkin, basil. Simmer for 10-15 mins or until stock is all absorbed.
Season with salt and pepper and stir through cheese.

This is so delicious and simple!!
